Winemaking: Pre-fermentation maceration at low temperatures. Spontaneous fermentation 50% in stainless steel tanks, 40% in acacia barrels and 10% skin contact. The wine stays in contact with fine lees for approximately 6 months. Total sulfites at bottling 40 to 60 ppm.
